Quiet Luxury Granola
Pistachios, pumpkin seeds, sour cherries, apricots, vanilla, toasted buckwheat, and more!
The granola I’ve been making, enjoying, and gifting all month. You didn’t ask for it, but you’ll be glad I shared - I’ve never had so many people ask me to send the recipe for something before. It’s simple, classy, and guaranteed to impress your guests.
I wouldn’t say it’s cheaper to make your own granola, this put me back a pretty penny and I don’t want to misguide you or pretend like I didn’t notice. I thought making my own granola would be more cost effective - but I think it only inspired me to buy fancier ingredients than the store bought brands. Oh well, it was fun, creative, and truly delicious!
RECIPE:
3 cups old-fashioned rolled oats
1 cup nuts (almonds + pistachios), chopped
1/2 cup seeds (pumpkin)
1/4 cup buckwheat grouts
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup maple syrup
1/4 cup melted coconut oil
1 teaspoon vanilla
1/2 cup dried fruit (organic Turkish apricots + sour cherries), chopped
2 tablespoons extras (raw cacao nibs)
Preheat your oven to 300°F and line a baking sheet (or two) with parchment paper.
In a large bowl, combine the oats, chopped nuts, seeds, buckwheat, salt, and cinnamon. Mix well.
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the granola mixture evenly on the prepared baking sheet(s).
Bake in the preheated oven for 25-30 minutes, stirring every 10 minutes to ensure even browning.
Once the granola is golden brown and toasted, remove it from the oven and let it cool on the baking sheet. It will continue to crisp as it cools.
Once the granola has fully cooled, stir in the dried fruits and cacao nibs, then transfer to an airtight container for storage.
